Apple Cinnamon Oatmeal Bars

Serves: 9 bars

Ingredients:

  • 3/4 cup oat flour

  • 1 1/2 cup oats

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 cup milk of choice

  • 4 oz unsweetened applesauce

  • 1/4 cup maple syrup or honey

  • 1/4 cup coconut oil, melted

  • 1 egg

  • 1 tsp vanilla

  • 1 small apple, thinly sliced

Directions:

  1. Preheat oven to 350℉. Prepare 8x8 baking pan with parchment paper orgrease with oil.

  2. Combine oat flour, oats, cinnamon, baking powder, and salt in a large bowl.

  3. Combine milk, applesauce, maple syrup/honey, coconut oil, egg and vanilla in a medium bowl.

  4. Add wet ingredients into dry and stir to combine.

  5. Pour batter into baking pan. Top with apple slices.

  6. Bake for 40 minutes.

  7. Slice and enjoy! (Store in an airtight container in the refrigerator.)
