Fresh Tomato Basil Marinara Sauce Over Zucchini Noodles

Prep Time: 5-10 minutes
Cook Time: 25 minutes
Serves: 2-4

Ingredients:

  • 1/4 c onion, chopped

  • 2 garlic cloves, chopped

  • 1 Tbsp honey

  • 2 Tbsp olive oil

  • 4 small-medium heirloom tomatoes, diced or 4 c cherry tomatoes, sliced

  • 1/2 c fresh basil, sliced into thin ribbons

  • 1 Tbsp dried oregano 2-3 medium zucchini, spiraled aka noodles

  • Salt and pepper, to taste

    *Optional: 1 cup sliced mushrooms

Directions:

  1. Sauté chopped garlic and onion (and optional mushrooms) in a medium saucepan over medium heat with olive oil for about 3 minutes.

  2. Add in tomatoes, dried oregano and honey. Stir, and then let simmer for about 10-15 minutes.

  3. While tomatoes are cooking, sauté spiraled zucchini for about 6-8 minutes in a separate greased pan.

  4. Stir basil into the sauce before serving.

  5. Serve marinara sauce over a bed of zucchini noodles.

  6. Top with freshly grated parmesan cheese, more basil, and/or option fresh lemon zest!
