Morning Glory Muffins

Serves: 10-12
Ingredients:
1 cup shredded carrots
1 medium zucchini, shredded and squeezed liquid out
1/2 cup maple syrup
2 eggs
1/3 cup butter, softened
1 tsp vanilla extract
1 ripe banana, mashed
1 cup oat flower
1 cup whole wheat flour
1/4 cup unsweetened shredded coconut
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ginger
Pinch of salt
1/2 cup of chopped pecans
Directions:
Preheat oven to 350 and prepare a muffin tin with muffin liners or non-stick cooking spray
Combine carrots, zucchini, maple syrup, eggs, butter, vanilla extract, and banana in a medium sized bowl.
Combine the oat flour, whole wheat flour, coconut, baking soda, cinnamon, nutmeg, ginger, and salt in a large bowl.
Pour wet ingredients into the dry ingredients and mix well.
Add in chopped pecans.
Pour into muffin tins and bake for approximately 25 minutes.
