Morning Glory Muffins

Morning Glory Muffins

Cook Time: 25 minutes
Serves: 10-12

Ingredients:

  • 1 cup shredded carrots

  • 1 medium zucchini, shredded and squeezed liquid out

  • 1/2 cup maple syrup

  • 2 eggs

  • 1/3 cup butter, softened

  • 1 tsp vanilla extract

  • 1 ripe banana, mashed

  • 1 cup oat flower

  • 1 cup whole wheat flour

  • 1/4 cup unsweetened shredded coconut

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/2 tsp ginger

  • Pinch of salt

  • 1/2 cup of chopped pecans

Directions:

  1. Preheat oven to 350 and prepare a muffin tin with muffin liners or non-stick cooking spray

  2. Combine carrots, zucchini, maple syrup, eggs, butter, vanilla extract, and banana in a medium sized bowl.

  3. Combine the oat flour, whole wheat flour, coconut, baking soda, cinnamon, nutmeg, ginger, and salt in a large bowl.

  4. Pour wet ingredients into the dry ingredients and mix well.

  5. Add in chopped pecans.

  6. Pour into muffin tins and bake for approximately 25 minutes.
